Chateau Caillou represents a vineyard of 16 hectares located in Haut-Barsac on a clay and limestone plateau dotted with pebbles. It is planted with the finest vines; The Semillon representing 90% of the vineyard which is essential to develop botrytis cinerea.
Wines from Chateau Caillou benefit from a beautiful gold colour, notes of almonds, honey and cinnamon.
The remaining 10% of the Sauvignon perfect the freshness, the minerality with notes of citrus, lemon, exotic fruits and white flowers.
The final blend on the special Barsac terroir is part of the reputation of the grands crus classified so close to each other.
The whole harvest is harvested manually, inevitable for the 2,200 hectares of the Barsac & Sauternes appellation, where the famous "Botrytis cynerea" also called "noble rot" develops gradually involving 3 to 4 sorts. It is for this particular reason that the harvest can extend until mid-November.
Each harvest day is separated and gives rise to a lot number. The breeding lasts between 24 and 36 months according to the vintages for the Grand cru graded, vinified in barrels of French oak.
